Lemon Zucchini Bread
We have a ton of Zucchini in our garden this year and yet Michael won’t eat it. What’s a guy to do?

1 1/2 cups shredded zucchini
3/4 cup raw sugar
1 egg
1/2 cup vegetable oil
1 1/2 cups wheat flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon ground cinnamon
2 teaspoons lemon zest
Combine and bake at 350 for 1 hour or when you have a dry center.

I don’t mind eating zucchini if you wrap it in that delicious bread you made each time!

We call ‘em courgettes in the UK. Did you know you can make wine from them? Apparently it’s rather nice, dry and white - I think I saw a recipe on downsizer.net, which is a great source of what to do with surplus veg and fruit. We use all ours, but then it’s a completely veggie household and anything that does look like it’s going to be wasted goes to the hens, so next to nothing now goes to landfill. x
